          Abstract

          RESUMEN Introducción: La etapa decisiva en la demanda tecnológica, inversionista y energética para la producción de harina de Manihot esculenta Crantz (yuca), es el secado neumático de sus pastas. Objetivo: El objetivo del trabajo es optimizar el diseño de una instalación productora de harina de yuca considerando como funciones de optimización los indicadores dinámicos de rentabilidad y como variables independientes la capacidad de tratamiento de raíces y la temperatura del gas de secado para una combinación energética que utiliza biogás y petróleo crudo cubano como agente de secado. Materiales y Métodos: Se seleccionó una tecnología apropiada, adoptando esquemas tradicionales para las etapas iniciales y diseñando el equipamiento para el secado neumático. Se modelaron los indicadores valor actual neto, tasa interna de retorno y periodo de recuperación al descontado a través de un diseño experimental central compuesto, generando nueve corridas y determinando los indicadores económicos tradicionales que permitieron establecer los flujos de caja en las condiciones previstas. Los modelos de regresión de los indicadores dinámicos de rentabilidad se optimizaron mediante análisis de cordillera utilizando la metodología de superficie de respuesta. Resultados y Discusión: La variante óptima económica tiene una capacidad de 13 242,6 traíces/a, alimentando a un secadero neumático con conducto de 30,42 m3 una mezcla de aire y gases de combustión de biogás y petróleo crudo cubano con 113,34 °C. Conclusiones: En las condiciones óptimas se logra un equilibrio adecuado entre los factores técnico-económicos, energéticos y ambientales.

          Translated abstract

          ABSTRACT Introduction: The decisive stage in technological, investment and energy demand for the production Manihot esculenta Crantz (cassava) flour, is their paste pneumatic drying. Objective: To optimize the design of a cassava flour production facility considering as optimization functions the profitability dynamic indicators and as independent variables the root treatment capacity and the drying gas temperature for an energetic combination using biogas and Cuban crude oil as drying agent. Materials and Methods: Appropriate technology was selected, adopting traditional schemes for the initial stages and designing equipment for pneumatic drying. The indicators net present value, internal rate of return and discounted payback period were modeled through a central compound experimental design, generating nine runs and determining the traditional economic indicators that allowed establishing the cash flows under the foreseen conditions. Regression models for dynamic profitability indicators were optimized by means of ridgeline analysis using response surface methodology. Results and Discussion: The optimum economic variant has a capacity of 13 242.6 troots/y, feeding a mixture of air and flue gases of biogas and Cuban crude oil at 113.34 °C to a pneumatic dryer with a duct of 30.42 m3. Conclusions: An adequate equilibrium between technical-economic, energetic and environmental factors is achieved under optimal conditions.

          Cassava: Nutrient composition and nutritive value in poultry diets

          Insufficient supply, high prices and competition with the human food and biofuel industries means there is a continuous demand for alternative energy sources for poultry. As a result, cassava is becoming an increasingly important ingredient in poultry diets, largely due to its high availability. Efficient use of cassava products has been shown to reduce feed costs of poultry production. The utilisation of cassava is, however, limited by a number of factors, including its high fibre and low energy content and the presence of anti-nutritional factors, primarily hydrocyanic acid (HCN). With correct processing the inclusion level of cassava in poultry diets could be increased. Extensive research has been conducted on cassava products for poultry, but there is still a lack of consistency amongst the measured nutritive values for cassava and its products, hence variation exists in results from poultry studies. This paper reviews the nutrient composition of cassava products and its value as an alternative energy source in poultry diets.
