          Abstract

          La técnica de conservación en atmósfera modificada consiste en empacar los productos alimenticios en materiales con barrera a la difusión de los gases, en los cuales el ambiente gaseoso ha sido modificado para disminuir el grado de respiración, reducir el crecimiento microbiano y retrasar el deterioro enzimático con el propósito de alargar la vida útil del producto. Dependiendo de las exigencias del alimento a envasar, se requerirá una atmósfera con ambientes ricos en CO2 y pobres en O2, los cuales reducen el proceso de respiración en los productos, conservando sus características fisicoquímicas, organolépticas y microbiológicas por un mayor tiempo.

          Translated abstract

          The modified atmosphere technique consists on packing food in materials that produce a barrier against the diffusion of gasses, in which the gas environment has been modified in order to lower the respiration grade and the microbial growth, and also delaying the enzymatic development aiming to enlarge the usefulness time of the product. Depending on the demands of the food to be packed, an atmosphere with environments rich in CO2 and poor in O2 will be required. They reduce the respiration process in the products, keeping their physicalchemical, organoleptic and micro biological characteristics for a longer term.

          A técnica de conservação em atmosfera modificada consiste em embalar os produtos alimentícios em materiais com barreira à difusão dos gases, nos quais o ambiente gasoso foi modificado para diminuir o grau de respiração, reduzir o crescimento microbiano e atrasar a deterioração enzimática com o propósito de alongar a vida útil do produto. Dependendo das exigências do alimento a embalar, se requererá uma atmosfera com ambientes ricos em CO2 e pobres em O2, os quais reduzem o processo de respiração nos produtos, conservando suas características físicoquímicas, organolépticas e microbiológicas por um maior tempo.
