          Abstract

          Uma meta-análise foi realizada para avaliar o desempenho e a qualidade de carcaça e carne de suínos em função do sistema de alojamento nas fases de crescimento/terminação. Foram selecionadas publicações indexadas com resultados de experimentos comparando variáveis de desempenho e de pós-abate de suínos alojados em sistemas intensivos convencionais ou ao ar livre. A base de dados contemplou 27 artigos publicados entre 1997 e 2009. Ao total, foram considerados 2.985 animais e 701 médias na análise de dados. A meta-análise foi realizada através de duas análises sequenciais: gráfica e de variância-covariância. O sistema de criação de suínos ao ar livre aumentou em 9% (P<0,05) o consumo de ração, reduziu em 2% (P<0,01) o ganho de peso diário e piorou em 3% (P<0,05) a conversão alimentar dos animais em relação ao sistema confinado. As características de carcaça (peso de carcaça quente, rendimento, espessura de toucinho e percentual de carne magra) e de carne no Longissimus dorsi (perda por gotejamento e cozimento, pH, temperatura inicial, força de cisalhamento, marmoreio dureza, maciez e suculência) não foram influenciadas (P>0,05) pelo sistema de alojamento dos suínos. Concluiu-se que o sistema de criação influencia no desempenho dos suínos, mas não interfere nas características de carcaça e carne estudadas.

          Translated abstract

          A meta-analysis was carried out to study performance and characteristics of carcass and meat in pigs in function of housing system during the growing/finishing period. Indexed publications with results of experiments comparing performance and post-slaughter variables of pigs housed in outdoor or conventional intensive systems were selected. In total, 2.985 animals and 701 averages were considered in the data analysis. Meta-analysis followed two sequential analyses: graphic and variance. The outdoor productive system increased in 9% (P<0.05) feed intake, reduced in 2% (P<0.01) daily weight gain and worsened in 3% (P<0.05) feed conversion ratio of pigs in comparison to animals in the confined system. Characteristics of carcass (hot carcass weight, yield, backfat thickness and lean meat percentage) and Longissimus dorsi meat (drip and cooking loss, pH, the initial temperature, shear force, marbling, hardness, juiciness and tenderness) were not affected (P>0.05) by the housing system. It is concluded that the housing system influences the pig performance, but does not interfere in characteristics of carcass and meat.

          Effects of feeding and rearing systems on growth, carcass composition and meat quality in pigs.

          Animal growth performance and quality of pork depend on the interactive effects of pig genotype, rearing conditions, pre-slaughter handling, and carcass and meat processing. This paper focuses on the effects of feeding and rearing systems (feeding level and diet composition, housing, production system, etc.) on growth performance, carcass composition, and eating and technological qualities of pork. The feeding level and protein : energy ratio can be used to manipulate growth rate or composition of weight gain. Restricted feed allowance strongly reduces growth rate and carcass fatness and also intramuscular fat (IMF) level, resulting in decreased meat tenderness or juiciness. Expression of compensatory growth due to restricted followed by ad libitum feeding modifies the composition of weight gain at both carcass and muscle levels, and may improve meat tenderness due to higher in vivo protein turnover. Decreasing the protein : energy ratio of the diet actually increases IMF and improves eating quality, but gives fatter carcasses. In contrast, a progressive reduction in the protein : energy ratio leads to similar carcass composition at slaughter but with higher IMF. Technological meat traits (pH1, pHu, colour, drip loss) are generally not affected by the level or protein : energy in feed. Modification of fatty acid composition and antioxidant level in meat can be obtained through diet supplementations (e.g. vegetable sources with high n-3 fatty acids), thereby improving the nutritional quality of pork. Influences of pig rearing system on animal performance, carcass and meat traits result from interactive effects of housing (floor type, space allowance, ambient temperature, physical activity), feeding level and genotype in specific production systems. Indoor enrichment (more space, straw bedding) generally increases growth rate and carcass fatness, and may improve meat juiciness or flavour through higher IMF. Outdoor rearing and organic production system have various effects on growth rate and carcass fatness, depending on climatic conditions and feed allowance. Influence on meat quality is also controversial: higher drip and lower pHu and tenderness have been reported, whereas some studies show improved meat juiciness with outdoor rearing. Discrepancies are likely due to differences between studies in rearing conditions and physiological responses of pigs to pre-slaughter handling. Specific production systems of the Mediterranean area based on local breeds (low growth rate, high adiposity) and free-range finishing (pasture, forests), which allows pig to express their genetic potential for IMF deposition, clearly demonstrate the positive effects of genotype × rearing system interactions on the quality of pork and pork products.

            Feeding Iberian pigs with acorns and grass in either free-range or confinement affects the carcass characteristics and fatty acids and tocopherols accumulation in Longissimus dorsi muscle and backfat

            The experiment was undertaken to provide information on the influence of grass intake in a high fat diet based on acorns, in either free-range or confinement, on the carcass yield and characteristics, and on the accumulation of fatty acids and tocopherols. Groups raised free-range or with acorns and grass in confinement had the highest total backfat. Grass addition to the feed did not significantly modify the carcass weight and cut yield. However, outdoor raising produced lower carcass weights and yield, Longissimus dorsi muscle and ham weights than those fed the formulated diet or acorns and grass in confinement. Neither grass intake nor outdoor rearing did modify significantly the proportion of saturated fatty acids of the backfat. However, a lower proportion of saturated fatty acids was found in the intramuscular neutral lipids from pigs fed outdoors. Pigs reared free-range had significantly (P=0.0001) higher proportions of C18:1n-9 in the inner layer and in the intramuscular neutral lipids than the other groups. The grass intake significantly (P=0.0001) increased the proportion of C18:3n-3 in the inner and outer fat layers and intramuscular neutral lipids, while the outdoor rearing system not only affected on the proportion of linolenic acid but also C22:5 and C22:6 of the inner backfat layer and intramuscular polar lipids. These results suggest that the outdoor rearing allows a higher accumulation of n-3 fatty acids maybe due to an increased activity of the desaturase and elongase enzymes. On the other hand, the accumulation of tocopherols was not significantly modified neither by the grass intake nor the outdoor rearing, while differences were detected by the type of feeding (diet vs. acorns/acorns and grass). It is concluded, that the outdoor rearing system affects the nutritional value of meat, mainly by improving the fatty acid composition.

              Influence of rearing conditions on performance, behavioral, and physiological responses of pigs to preslaughter handling, carcass traits, and meat quality.

              A total of 120 crossbred [synthetic line x (Large White x Landrace)] pigs (castrated males and females) were used to evaluate the influence of rearing conditions for growing-finishing pigs on growth performance, carcass, stress reactions at slaughter, and meat eating quality. At approximately 35 kg of live weight (LW), littermates were allocated to either a conventional (fully slatted floor, 0.65 m2/pig, considered as control, CON) or an alternative (sawdust bedding with free access to an outdoor area, 2.4 m2/pig, OUT) system, until slaughter at approximately 110 kg of LW. Pigs had free access to standard growing and finishing diets. The trials were conducted in spring, summer, and winter, with each season involving 2 pens of 10 pigs in each system. Compared with the CON, the OUT pigs exhibited a greater growth rate (+10%, P 0.10) influence the behavioral activities of pigs during lairage at the slaughterhouse, or the urinary levels of catecholamines and cortisol, and plasma levels of ACTH, cortisol, lactate, creatine kinase, and FFA immediately after slaughter. The OUT pigs had similar (P > 0.10) pH values 30 min postmortem (pH1) in the LM, biceps femoris (BF), and semimembranosus (SM) muscles, similar ultimate pH (pHu) in LM, but lower pHu in SM (- 0.07 unit, P 0.07). Intramuscular fat content was greater in the LM (+17%, P = 0.001), BF (+14%, P = 0.004), and SM (+17%, P = 0.003) of the OUT pigs. Outdoor rearing during summer and winter improved meat juiciness, whereas odor, flavor, and tenderness were unaffected (P > 0.10). Influence of rearing conditions on all the other traits studied did not depend on the season.
