      Physicochemical characteristics of lamb meat fed with cottonseed associated with calcium lignosulphonate

          Abstract

          ABSTRACT. The physicochemical characteristics of the meat from lambs fed diets containing whole or disintegrated cottonseed, associated or not with calcium lignosulfonate (LignoCaSO3), were evaluated. Thirty non-castrated Dorper x Santa Inês lambs, with an average of 24.9 ± 3.6 kg and four months of age were confined for 60 days in collective stalls and distributed in a completely randomized design with six replications. After slaughter, by means of contrasts, the averages of the parameters of the semimembranous and semitendinosus muscles were analyzed. The cottonseed increased cooking loss and ash, and reduced muscle weight, water holding capacity and red intensity. The disintegration of the cottonseed reduced the shear force in diets without LignoCaSO3, increased the protein and the loss by cooking and reduced the pH in the diets with the additive. The luminosity values increased with the disintegration of the cottonseed in diets with and without LignoCaSO3. The addition of LignoCaSO3 increased the weight of the muscle, protein, ash, pH, shear strength and the intensity of red. Moisture, lipids and yellow intensity were not influenced by the diets. Even changing the physical-chemical characteristics, the cottonseed with or without LignoCaSO3 does not change the quality of the meat.

          Milk production and composition, ovarian function, and prostaglandin secretion of dairy cows fed omega-3 fats.

          Four multiparous Holstein cows were used in a 4 x 4 Latin square experiment to study the effects of fat sources rich in omega-3 fatty acids on milk production and composition, follicular development, and prostaglandin secretion. All cows were fed a total mixed diet containing 60% grass silage and 40% concentrate. The four treatments were concentrates based either on Megalac, formaldehyde-treated whole linseed, a mixture (50:50, oil basis) of fish oil and formaldehyde-treated whole linseed, or no fat source in the concentrate but with 500 g per day of linseed oil being infused into the duodenum. Feed intakes and milk yield were similar among treatments. In general, the lowest digestibility was observed for the formaldehyde-treated whole linseed treatment. Feeding fish oil decreased milk fat and protein percentages. Alpha-linolenic acid increased from 1.0 to 13.9% of milk fatty acids with linseed oil infusion. This confirms the high potential to incorporate alpha-linolenic acid into milk, and suggests that the formaldehyde treatment had little effect to limit biohydrogenation in the rumen. Increasing the supply of alpha-linolenic acid to these cows did not result in an increase in the concentration of eicosapentaenoic acid in milk. Levels of 13,14-dihydro-15-keto-PGF2alpha in plasma were higher for cows receiving formaldehyde-treated linseed and fish oil. Increases in this metabolite in response to oxytocin challenge, tended to be lower for cows given linseed either as sole oil supplement in the diet or as a duodenal infusion of linseed oil. Follicle dynamics were similar among treatments. Larger corpora lutea (CL) were found with cows that received high levels of omega-3 fatty acids through the diet as formaldehyde-treated linseed or as a mixture of formaldehyde-treated linseed and fish oil, although CL were smaller when cows were infused with linseed oil into the duodenum. These results suggest that the improvement in gestation rate that was observed when feeding increased levels of alpha-linolenic acid in earlier work may partly result from lower levels of production of the dienoic prostaglandin PGF2alpha.

            Meat and fat quality of unweaned lambs as affected by slaughter weight and breed.

            Sixty-four male lambs of two Southern Spanish breeds, a dairy breed (Grazalema Merino) and a meat breed (Churra Lebrijana), were used to study the effects of slaughter weight and breed on meat traits and intramuscular and subcutaneous fat composition. Lambs were reared following a traditional production system without weaning and slaughtered when live weight reached 12kg (suckling) or 20kg (light). Meat from suckling lambs of both breeds had lower fat and myoglobin contents, and was more tender and had higher scores for sustained juiciness in the sensory analysis. Fat from light lambs had lower C12:0 and C14:0 levels than fat from suckling lambs. Grazalema Merino meat had higher fat and ash contents, and its fat had higher conjugated linoleic acid content than Churra Lebrijana meat.

              Desempenho e características qualitativas da carcaça e da carne de cordeiros terminados em confinamento alimentados com dietas contendo soja grão ou gordura protegida

              O objetivo foi avaliar o desempenho, as características das carcaças e a qualidade da carne de cordeiros Santa Inês, terminados em confinamento, alimentados com dietas contendo 60% de concentrado e enriquecidas com soja grão ou gordura protegida. Os concentrados foram compostos de farelo de soja, milho, farelo de trigo, ureia, núcleo mineral, soja grão ou gordura protegida. Como volumoso foi utilizado o feno de capim-tifton 85. Foram utilizados 24 cordeiros com aproximadamente 19,30 ± 1,77 kg e média de idade de 5 meses alojados em baias individuais por um período de 105 dias (21 de adaptação e 84 dias de período experimental). Os animais foram pesados ao início do experimento e a intervalos de 28 dias, com a finalidade de acompanhar o ganho de peso dos animais. Findo o experimento, foram abatidos para mensurações nas carcaças e avaliação das características quantitativas. Após o resfriamento das carcaças por 24 horas, foram retiradas amostras do lombo para análises da qualidade da carne. O delineamento experimental foi o inteiramente casualizado, com três tratamentos e oito repetições. Os animais que receberam a gordura protegida apresentaram maior ganho em peso (0,24 kg/dia). As dietas contendo soja grão ou gordura protegida proporcionaram melhor conversão alimentar (4,80 e 4,06 respectivamente). O enriquecimento da dieta com soja grão ou gordura protegida não promove diferenças significativas nas características de carcaça nem na qualidade da carne.
