      Assessment of Performance of the Industrial Process of Bulk Vacuum Packaging of Raw Meat with Nondestructive Optical Oxygen Sensing Systems

          Abstract

          The commercially-available optical oxygen-sensing system Optech-O 2 Platinum was applied to nondestructively assess the in situ performance of bulk, vacuum-packaged raw beef in three ~300 kg containers. Twenty sensors were attached to the inner surface of the standard bin-contained laminate bag (10 on the front and back sides), such that after filling with meat and sealing under vacuum, the sensors were accessible for optical interrogation with the external reader device. After filling and sealing each bag, the sensors were measured repetitively and nondestructively over a 15-day storage period at 1 °C, thus tracking residual oxygen distribution in the bag and changes during storage. The sensors revealed a number of unidentified meat quality and processing issues, and helped to improve the packaging process by pouring flakes of dry ice into the bag. Sensor utility in mapping the distribution of residual O 2 in sealed bulk containers and optimising and improving the packaging process, including handling and storage of bulk vacuum-packaged meat bins, was evident.

          Optical methods for sensing and imaging oxygen: materials, spectroscopies and applications.

          We review the current state of optical methods for sensing oxygen. These have become powerful alternatives to electrochemical detection and in the process of replacing the Clark electrode in many fields. The article (with 694 references) is divided into main sections on direct spectroscopic sensing of oxygen, on absorptiometric and luminescent probes, on polymeric matrices and supports, on additives and related materials, on spectroscopic schemes for read-out and imaging, and on sensing formats (such as waveguide sensing, sensor arrays, multiple sensors and nanosensors). We finally discuss future trends and applications and summarize the properties of the most often used indicator probes and polymers. The ESI† (with 385 references) gives a selection of specific applications of such sensors in medicine, biology, marine and geosciences, intracellular sensing, aerodynamics, industry and biotechnology, among others.

            Biological detection by optical oxygen sensing.

            Recent developments in the area of biological detection by optical sensing of molecular oxygen (O2) are reviewed, with particular emphasis on the quenched-phosphorescence O2 sensing technique. Following a brief introduction to the main principles, materials and formats of sensor technology, the main groups of applications targeted to biological detection using an O2 transducer are described. These groups include: enzymatic assays; analysis of respiration of mammalian and microbial cells, small organisms and plants; food and microbial safety; monitoring of oxygenation in cell cultures, 3D models of live tissue, bioreactors and fluidic chips; ex vivo and in vivo O2 measurements; trace O2 analysis. For these systems, which enable a range of new bioanalytical tasks with different samples and models in a minimally invasive, contact-less manner, with high sensitivity, flexibility and imaging capabilities in 2D and 3D, relevant practical examples are presented and their merits and limitations discussed. An outlook of future scientific and technological developments in the field is also provided.
