          Abstract

          Resumen Objetivo: Comprender los hábitos de consumo gastronómico de un grupo poblacional poco explorado desde su sentido, pero crecientemente explotado como target de consumo, las parejas DINK (double income no kids). Metodología: Se realiza bajo el enfoque cualitativo, entrevistas etnográficas a doce parejas buscando identificar las dinámicas que se crean al interior del hogar y al momento de salir a comer a restaurantes u otros escenarios, a la luz del sistema culinario según el Ministerio de Cultura (2012). La muestra fue comprendida entre los 25 y 45 años, sin hijos, con estudios superiores aprobados y laboralmente activos. Resultados: La mayor parte de su abastecimiento alimentario responde a suplir los desayunos y las cenas principalmente, lo cual deriva en que sean estas dos comidas las que se acostumbren elaborar al momento de cocinar. Limitaciones: Varios individuos informan visitar de manera periódica la casa de sus padres para alimentarse, situándolos en una condición de no obligatoriedad para desarrollar habilidades culinarias. Conclusiones: La relación que establecen con la cocina está mediada por la practicidad, la máxima optimización del tiempo y el consumo de alimentos frescos en pocas cantidades; estas circunstancias los alejan de las preparaciones de cocinas tradicionales que demandan esfuerzo y dedicación, dirigiéndose inevitablemente hacia unas comidas de fácil elaboración.

          Abstract Objective: Understand the habits of gastronomic consumption of a population group little explored from its sense, but increasingly exploited as a consumption target, DINK couples (double income no kids). Methodology: Ethnographic interviews are conducted with 12 couples under qualitative approach, seeking to identify the dynamics that are created inside the home and when eating out to restaurants or other settings, according to the culinary system of Culture Ministry. The sample was between 25 and 45 years old, without children, with approved studies and work-related degrees. Results: Most of its food provide responds to supply breakfast and dinner mainly, which results in these two meals that they use to cook. Limitations: Some people report periodically visiting their parents' house for eating, placing them in a condition of non-obligation to develop culinary skills. Conclusions: The relationship they establish with the kitchen is mediated by practicality, maximum optimization of time and the consumption of fresh food in a few quantities; these circumstances take them away from the preparations of traditional cuisine that demand effort and dedication, inevitably heading towards easy-to-prepare meals.

              Explaining fertility transitions.

              In this essay, I suggest that the crisis in our understanding of fertility transitions is more apparent than real. Although most existing theories of fertility transition have been partially or wholly discredited, this reflects a tendency to assume that all fertility transitions share one or two causes, to ignore mortality decline as a precondition for fertility decline, to assume that pretransitional fertility is wholly governed by social constraints rather than by individual decision-making, and to test ideas on a decadal time scale. I end the essay by suggesting a perceptual, interactive approach to explaining fertility transitions that is closely allied to existing theories but focuses on conditions that lead couples to switch from postnatal to prenatal controls on family size.
